Salsa

Our garden consists of a bed of raspberries, a bed of strawberries, a bed of zucchini (for zucchini bread) and pumpkins,and a whole bed of tomatoes so we can make salsa.  It's always a bit overwhelming at the amount of tomatoes I have to harvest and use each year, but the salsa is worth it.  I learned a few years ago to freeze the tomatoes as they become ripe, then we pull them all out of the freezer and use them at once.  It's quite the production.
